I agree about everything not having to be a murder trial too. More variety in the type of cases lends itself more to trying to tie them all in together at the end if you want too, so each game has some cohesion and more of a larger plot line.
I have to agree that the second one is the worst one, though personally I liked Apollo Justice even less, just because of the radical cast change and me never warming up to Apollo as a protagonist (Athena on the other hand, who is introduced in AA 5 I really liked).
I'm on the fence wether the 3rd or 5th game is the best in the series, but I'd check them all out if I were you. And yeah, you could skip the second game if you wanted to, the only case that plays any important role in the overarcing plot is the second one.
And come on, it wouldn't be "interesting' if it wasn't a murder trial. All big court dramas are about murder mysteries. And what you probably don't know, is that the series is a parody of the Japanese legal system, where people are forced into confessing that they committed a murder crime (google it, the escapist made an article on it, but it's not working right now :/)
