I love the FFVII Snowboarding and Highway Battle.
The "Trendy Game" prize grabber from Zelda: Link's Awakening & the Shooting Range from Zelda aLttP were kinda fun too.

The motorcycle battle was definitely my most played attraction at the Gold Saucer.
