You'd be surprised. 
Let's look at the "Defining Games" lists... hrm, beat all the NES ones, unless the honorable mention Adventure Island games count.
SNES... well, crap, there's one right there. I never finished Donkey Kong Country 2, and it's supposed to be the best of the series. Never finished Star Fox or F-Zero, either. Maybe Earthworm Jim or Flashback from the honorable mentions.
Genesis... several I haven't finished, but not interested in. Maybe Revenge of Shinobi. Or Shining in the Darkness if I decide to go for an RPG.
Saturn... the 800-lb gorilla is Shining Force III. Don't want that kind of investment, though!
PSX... never finished a Crash or Spyro game. Might do one of those. Also, I've never beaten a single Resident Evil game.
N64... working on Majora's Mask, that should totally count, even if it's the 3DS version. Never beat the Banjo games. Never beat Goldeneye or Perfect Dark.
GBA... probably need to play through all the Zero games, only finished the first two.
Start throwin' out RPGs, though, and if they're SNES/Genesis/NES, I've probably already beaten them.

That... might take a long time to put together. This isn't a backlog-clearing thread. These should be self-evident bonafide classics.
Many of the games you listed in your subsequent post were solid candidates though, Sarge. I, too, no longer have eligible console RPGs.

More possibilities for extra credit, in no particular order:

I obviously didn't grow up a Nintendo kid, so I'm looking at this as an unofficial "Summer of SNES/NES." I'm gonna get educated.

Somehow I got myself determined to beat the game as a teenager and made it to World 8, but I either got stuck or aggravated/apathetic enough to abandon mission. I'm going to try to enjoy it this time. I think my dogbone controller will help immensely with this.
I haven't beaten any of the other Marios, either. I didn't have Mario 2 until high school and never made a serious attempt, and I had a traumatic experience involving a brownout at the final castle of Mario 3 that's still difficult to reflect on.
