I agree with almost every word you've said here. The only part that baffles me is, "the day after thanksgiving". That's always been leftovers day for me.

Should have been more clear -- it's the only exception to the fresh sandwich rule! When making a large feast (usually on a holiday)...the day that follows produces sublime sandwiches...it's all in the flavours getting that extra night in the fridge to develop.
