Yeah its a ROM cart and its required to play - kind of unique which is cool.

If you have a PS2 or Wii just get the Orochi Saga collection. It has 95-97.

For something weird, try Groove on Fight; it's from the Power Moves series.
I second/third the fast-paced Dead or Alive. though the PSX version comes with Ayane.
I'd also second Pocket Fighter, but there is also a domestic PSX port of it.
Fighting Vipers is nice (if just to see PEPSIMAAAN in action), but Megamix really covers more ground.
Fire Pro Wrestling S: 6-Man Scramble is something that's nice to try... but it's overshadowed by FPW-D (DC, NTSCJ) and FPW-R (PS2, NTSCU).
How about Guardian Heroes if I'm going on on tangents already?

Art of Fighting is pretty rigid (except the 3rd game), but Fatal Fury always had cancel-combos (at least FF2/FFS had a few, but the controls were really wound up).

Recommending Groove on Fight for its absurdity.
KoF 95 is not suggested on an American system because of the difficulty using an AR and Rom cart to get it to work, if it works at all.
The other KoFs seem really slow to me because of all the loading when switching characters.

I'd be using a PAL system and I'll fit a switch to make it region free
The AR cart is starting to annoy me because I have to keep shuffling the files in and out of the internal memory.

Just saw Flake's Flake Industry thread and lo and behold Sonic Council is on there. Along with Asuka 120%, are pretty and fast-paced fighters. (Though not terribly deep; think "Primal Roar")

If you can get them, the Best collections are good, just a little salty. There's the Samurai Spirits, and Fatal Fury Best collections.
Waku Waku 7 is definitely quirky and unique, but solid nonetheless. VF are always good, especially VF Kids. Throw in Fighters' Megamix, and Golden Axe: The Duel.
