Here are some comparison shots. The first one is on a real N64. The second is from Wii64 which looks essentially the same as the VC emulator.

Notice how the edges look smoother on the wii because of the higher resolution. It is most noticeable on the edge to the right of Banjo. Also notice how the blur is gone around Bottle's mole hill on the wii.

Even on its own games, the PS2 had the poorest texture filtering of its generation, so it shouldn't be a surprise that it falls flat with PS1 games
It depends on the game. I found that Rival Schools look a lot better with it, but I can't really think of anything else that had a particularly noticable improvement.
