I'm doing my best not to list the arcade versions of things, though there are several cases where I would say that is preferable. It's your call though.

Beat-Em-Up:
Final Fight (Sega CD)
Streets of Rage (GEN)

Fighting:
Street Fighter II Turbo (SNES)
Virtua Fighter 2 (Saturn)
Soul Calibur (Dreamcast)

Platformer:
Super Mario Bros 3 (NES)
Sonic the Hedgehog (GEN)
Super Mario 64 (N64)

Shooter: (I'll give a mix)
Doom (PC)
007 GoldenEye (N64)
Half-Life (PC)

Ikaruga (DC)
Gradius (not sure what would be the best)
Raiden (not sure what would be the best)

Action: (you didn't include survival horror, so a couple go here)
Resident Evil 2 (PS1)
Silent Hill (PS1)
Super Metroid (SNES)

Adventure:
Myst (PC)
Adventure (2600)
Zork (PC)

Driving:
Out Run (take your pick)
Gran Turismo (PS1)
Ridge Racer (PS1)

Puzzle:
Tetris (Game Boy)
Puzzle Bobble (Take your pick)
Pipe Dream (PC)

Rhythm:
PaRappa the Rapper (PS1)
Beatmania (PS1)
Dance Dance Revolution (PS1)

Simulation:
SimCity (PC)
Descent: FreeSpace (PC)
MechWarrior 2 (PC)

RPG:
Final Fantasy VI (SNES)
Diablo (PC)
Star Ocean: The Second Story (PS1)

Sports:
Shaq Fu (Game Boy)
Michael Jordan: Chaos in the Windy City (SNES)
Tales of Game's Presents Chef Boyardee's Barkley, Shut Up and Jam: Gaiden, Chapter 1 of the Hoopz Barkley SaGa (PC)
(What?)

Strategy:
Total Annihilation (PC)
Warcraft II (PC)
Romance of the Three Kingdoms (NES)

How's that?

thanks guys, anyone else? If you don't play a particular genre, just name the first 3 games that come to mind. Even that is an indication that the games are well associated with the genre (at least to you).

Likewise, you could say any of Compile's shmups and most of Toaplan's as well.

Definitely, Compile and Toaplan are the best of the best as far as old-school shumps go.

Looks like I have a lot of homework to do, because I'm not that familiar with Compile! Haha... the shmup world is a beast. They apparently did Guardian Legend though? Holy crap yeah, gotta love that cover art, love that game. Think I've maybe played a few of their Genesis titles though, like Musha Aleste.

Speaking of this stuff I swear there was a huge Genesis shmup guide on racketboy that I was planning on diving into someday, that I can't find anymore... maybe I'm making this up? (maybe it was a Sega-16 article?)
