I wouldn't say they "hold up", but I definately enjoy popping in:

NES Play Action Football
If nothing else for the memories they bring back. From hold-up value, I think all the tecmo games are still great fun and with exception of maybe graphics, would much rather play them over Madden/NFL2K type of stuff.

And as 7k said, Kunio sports game. (Soccer, Dodgeball, V-Ball, B_ball, Hockey RPG...) There was also those Tsubasa Soccer RPGs, but the AI in later stages can get sticky without heavy grinding...

Technically it's 24 bit, but Baseball Stars 2 for the Neo Geo is pretty good.
Also do fictional sports games count? Ballblazer is pretty awesome as is Windjammers.
I remember liking World Series Baseball. I should play that because Chicago Cubs baseball starts this weekend
