Checked out the Wii U video. Looked interesting. Are they all in the early 8 bit pixel art style?

No, just that particular one. He usually tries to match the game's visual style with the era. So Undertakes takes place in the 70s, so it was stylized like an Atari 2600 game. Galaxy Bound Curse, on the other hand, takes place in the 90s, so it's a Game Boy Color game.

Ahhh that's a cool premise. Are they all on Nintendo systems and Vita? Did a quick but not comprehensive search.
