I'd like to suggest Sensible Soccer (in one of its incarnations, probably SWOS), and Speedball 2.

Ha, I love Blades of Steel! Also a big fan of the old NES Ice Hockey game. Nice and simple. :)

I still dig NBA Jam T.E. (Genesis) and plain ol' vanilla Tecmo Bowl.

Bo knows how to be a dank video game character.

QFT. I'd like to vote for Konami's original International Superstar Soccer on the SNES, Track & Field and Codemaster's Pete Sampras Tennis.

Personally, I've always been a fan of Shaq Fu and Michael Jordan: Chaos in the Windy City.

Seriously now, I'd say Punch Out. Beyond that, I don't play sports games very much, so I really couldn't tell you.
