The same reason their are triple that number of dog food varieties - some people like to give their pets better food than most of us eat.
My cats get a bag of standard food and multicat litter. Nothing fancy here. Though we do have organic catnip that we are growing, but that is because my cat needs to be chilled out every few days or she grabs fur.
