Descent 2, 3 - if you haven't played any of these just start with part 1.
Flight of the Amazon Queen - I honestly thought Indiana Jones was borderline, but it's probably still a better pick than this.
Top Gear - Had to Google this, didn't even know it existed. There are so many more notable racers you could pick instead.
Dragonsphere - Probably only known among those who love point-and-click, too obscure.
Sanitarium - See above.
Thief 2 - Cult classic.
Quake 2 Mission Packs: The Reckoning/Ground Zero - I can't envision any circumstances under which a mission pack belongs on a list of gaming classics.

I'm not sure what I'm going to roll with yet. The last few months have seen me tackling my own personal NES white whales, and I think I'm running out of stuff I really want to play on that front that's of quality. I'll... have to think a little more. Or just keep doin' what I do. 
In all honestly, there's a few CRPGs I've wanted to play through, like Baldur's Gate, Skyrim, or Septerra Core. I've also never actually played very far into Descent 3, despite loving the first two games. Maybe I should do that.

It doesn't really fit in with the general theme, but this summer I'm going to try and beat FFV 10 times in the Four Job Fiesta.
Another thing with regards to Bone cutting the other two Descent games off your list; Descent 1 is freaking hard and you'll probably want a break afterwards. I'd say do them 2016.

Only one I have real "issue" with is DMC3. Not crazy about opening this challenge up to "modern classics." That game is barely 10 years old.
