Seriously, the amount and flavor of the meat makes raw onions nothing more than crunchy water. If your meat (as with hotdogs and burgers) doesn't mask the flavor of onion, you got weak meat. Weak meat is no good. You eat the gyro I posted and you'd think "Hum. Hmm. Herm..There might be some onion up in here".

Pretty sure the tomato is for decoration.

I was gonna say, Greek food and a lot of Mediterranean food in general are jam packed with spices that a raw onion seems tame.

Garlic and marjoram.

In my younger years I thought it was the thyme and rosemary, but the amount of marjoram in "Kronos" Gyro meat is something amazing. Tons of salt too, which just makes the marjoram even stronger.

No complaining though, as it is delicious.

And I can not stress this enough: Always ask for saganaki at any and every Greek restaurant. Imagine the perfect grilled cheese, without the bread, and with real non-processed cheese. Imagine the world's best cheese stick, but as a sandwich. That's the heaven that saganki is. It's so so good to the point where I can't believe why every restaurant doesn't serve it, especially pizza joints and fast food hops. They don't even need the Brandy as "Dude. Fired cheese" should sell itself.

I like shwarma a bit more, I grew up eating it.
Sadly, the only place that makes it in my area and is edible overcooks the meat and doesn't seem to mix their bread right. It's too salty. The other place doesn't trim their meat right. Huge chunks of gristle and fat. It's pretty nasty.

Makes me sad, none of these recipes got handed down to me by my grandmother before she passed away this year. (Not that I ever actually got to speak to her or anything)

My Grandmother doesn't use recipes. As she puts it "I don't know Lukie, I just make the food!". On our last visit my wife and I wrote down what she used and what she did, so our recipes from her are a tad odd. Swear to God she makes the best pierogies I've ever had the delight to eat, but when I asked her "what cheese are you using?" her answer was, "pierogie cheese". That's hard to decipher as she shops at places that only speak Polish.

It's some type of elusive Farmers cheese, only to be found at one store off of Milwaukee blvd., but it is worth the trip. Totally worth it when you also visit a Polish bakery and a Polish deli.

Mmmm French Toast. Haven't made it in a while and it is only regular loaf bread, but still yummy.
