Speaking as an arcade collector, it's a little funny to see things like "an Ikaruga cabinet", "SFIV cabinet" or "a NAOMI cabinet". Many modern systems don't have dedicated cabinets. That idea died long ago as it was far too expensive for arcade operators to move whole cabinets around for every single game post the 1983 crash. There are some notable exceptions with speciality cabinets (dance games, driving games, gun games, etc). But even within those genres cabinets are fairly generic, and can be swapped around (as long as the dance pads are the same, almost any DDR game can go in any shell - the game itself is nothing more complex than a standard def widescreen TV connected to a box that was one of a PSX, PS2 or PC-spec machine).
For that reason I tend to separate the concept of "a cabinet" from "a game", unless I'm talking VERY early games (Centipede, Defender, etc - games that came from the era of dedicated cabinets per game).
I'm currently in love with Japanese style cabinets (often called "Candy Cabinets"). Some of the big name arcade game companies make the best cabinets of this kind - Sega, Taito, Konami, SNK, etc. Where I live the Sega Astro City cabinets seem to be quite popular. My favourite by far are Taito's cabinets. The Egret II and III, and the new Vewlix are superbly constructed. A lot of people also don't realise that the Atomiswave cabinet (another popular one with collectors of Sega Atomiswave and NAOMI gear) is not a Sega/Sammy cabinet (despite the fact that Sega do make cabinets), but actually designed by Taito.
So, where I to have my three dream cabinets, that's what they'd be: the three Taito cabs mentioned above. What would I put in them? Probably DoDonPachi in the Egret II, Mushihime Sama Futari in the Egret III, and SFIV in the Vewlix.
On a side note, collecting cabinets isn't as hard as people think. They're relatively easy to buy and make, and quite flexible as to what you can put in them (original arcade PCBs, old and new consoles, and PCs with emulators mean the amount of games you have available number in the tens of thousands). Here's my current (small) collection. In there you'll see:
* Black upright cabinet - scratch built. Currently running MAME, to be converted to Dreamcast. Build log:

* Blue "lowboy" cabinet - JAMMA. To be converted to MAME via a JPac
* Black cocktail - scratch built. Has a vertical monitor running MAME with only vertical games (mostly for shmups). Build log:

* Candy cabinet - "Megalo City" (Chinese knock-off of a Sega Versus City design). Running a modded PS2 mostly for fighting games (SF3:3S, Tekken5, Hokuto no Ken, Guilty Gear, Arcana Heart, Melty Bloood, SF Alpha Anthology, etc). I helped Gamedude Arcades here in Australia set up an arcade import system, and bought one of the first batch of machines.

Elvis, love your build log. I wish I had the motivation to build one right now. But I just finished an 18 month basement project, and I don't want to see another power tool ever again!
That being said, I have space down here for 3 cabinets (without the place looking cluttered). I would love to acquire:
1. Tron environmental cabinet (not the multigame ed.)
2. Assault (twin stick tank shooter)
3. NeoGeo MVS with World Heroes and Magical Drop
Obviously, I'm not going for the pinnacle of video game entertainment, these are all games that I have a personal nostalgic affinity towards.

I'd want a two-person Hydro Thunder (no, I'm not counting this as two)
a cocktail with Rampart (which I don't think was ever made)
and a Neo multi cab (not really savy on all the different makes and models, but since this is hypothetical, I want "the best" one)
