Just use a real wiimote. For games that need the pointer you will want to use a wireless sensor bar like this one: Amazon Link

I recently finally gave dolphin for my iMac and it rocks! (but then again i had a massive collection of isos already so ripping games wasn't an issue and made getting started super easy)

I used and still use a Seagate Mini external drive. I want to say its called the Freeagent Go? Even runs on the power from the Wii.

hmm oddly, the wireless sensor I got does not in fact use a USB dongle or anything. So now I'm not sure it will also work with my PC. The one I got is the same as the Amazon link actually. Am I just being stupid?

EDIT: Yup. I'm stupid. This will work fine.

I haven't actually figured out the Wiimote yet, but read it can be done. For now, I've just emulated it on 360 pad. But I've now tested a Wii and GCN game that I dumped from my Wii and then migrated over to Dolphin and both were flawless and looked incredible. Really, really digging this set up and feel like I might give my GCN/Wii library some overdue love again now.
