Anyways - When the race counter starts, hit the gas as soon as you see the #2. If you hit the juice before the 2 appears you'll spin out, but if you hit it as soon as the 2 appears you'll get the full boost. If you hit the gas when the 2 is disappearing you'll get a boost, albeit a smaller one.
As for the drifting mechanics...when you're heading into a turn, hit the R button to hop and hold it as long as needed to 'charge' your boost. Blue sparks = mini boost. Orange sparks = big boost. You definitely get better control around corners with drifting...not to mention speed. You should be drifting around 95% of corners, imho, but don't necessarily go out of your way to drift on every hairpin turn. Risk management and all that.
