Final Fantasy VIII: I've been playing this for the first time as of late. It's no FFVII, but it is a great game in its own right.
Wipeout XL: For some reason, I prefer this one over the others.
Xenogears: Can't be mentioned enough times

Tekken 3 and Thousand Arms

I was never a big PSX fan, except its JRPG catalog, but I do love the design and form factor of the PSone. The titles I have enjoyed are:

Gran Turismo 2 - One of the best racing titles ever made.
Jade Cocoon - Pokemon with survival horror controls
Ogre Battle/Tactics Ogre - Games that everyone needs to atleast try.
Battle Hunter - Fun cheap rpg
Chrono Cross - One of my favorite sound tracks of that generation
Pitfall 3d - Its got the king as the voice of Pitfall Harry.
Medal of Honor/Underground - Good little FPSs.
Point Blank series - If you can get the guns.
Destraga - What the dragonball games should have been - 3d arena fighter (think Powerstone or Keriotosse)
Metal Gear Solid VR Missions - Sure they are training missions, but I enjoyed them more than the actual game.
And ofcourse, most of the Square and Enix lineups.
