Oh, I guess? I didn't really feel like they were bosses. Mini boss at best. They were easy.

How easy you felt it was (TLOU was easy in general om the normal setting outside of a few small spots) isn't really a factor to me. Most Zelda bosses are pretty easy but they are obviously bosses.
It is all about how the moment is presented to you. Once you're locked down to one battle having to use your acquired skills up to that point it is pretty much a boss battle be it "mini" or otherwise.

I guess that's true. During the course of the game I just never thought of them that way. Maybe because I don't play many Western games like TLoU. I have no idea. 
Maybe because the game was very immersive and seemingly pretty human and realistic feeling. At least for a post apocalyptic game. Just sort of saw it as another trial to overcome. Just like all the other combat portions of the game.

I think Resident Evil fits the description for somewhat unnecessary or lazily placed bosses (from a narrative point of view). There is always certain points in the game (especially the modern series 4-6) where a big ass zombie just comes out of no where, and you have to kill it for the sake of killing it. Usually doesn't test skill that much since the game isn't really skill based.

That may actually have another purpose - encounters like that also chew up health items and ammunition, so it could be argued that the game is simply reducing your supplies to make the game more challenging later on. If a game has terrible boss fights then the problem is that the game's boss fights are terrible. The boss fights should have been improved, not discarded.
