Wait, can I get mods for the game? If I can get mods(and the necessary modding tools...and a few guides), I'll probably just go with Oblivion or Half Life.

Best hope the folks working on Oblivion Online would have fixed all the major issues.
I'm leaning towards Oblivion myself at this point. Age of Empires III wouldn't cut it - I would think the game with most lastability would be something with the most variety, where you could carry on where you left off, as opposed to starting a new round/game everytime you play it.
Either way, with one game to play, I'll inevitably be less interested in it over time, so I suppose I might as well pick the game that keeps me occupied for longest. In other words, the one that has the most for me to do.
OR a really slow - albeit fun - game. Generally, the games people call 'the kind of game that has you playing for so long without realising it' are the ones that require a lot of time, such as by having you travel large areas/world maps which take a lot of your time.
In which case, I'm thinking Mount & Blade again.

I will mention three games, and I don't count compilations as being acceptable, since they're more than one game, just crammed into the same space.
Diablo 2 was my first thought. I can see myself playing it forever, just because it's such a blast to play and it does change every time you play it.
Then I realized that an even better choice, for me anyway, would be RPG Maker for the PS1. It's really a lot of fun to make games, it takes creative thinking to figure out ways around the limitations of the software, plus once I made a game I could then play it as well. The only problem here is whether I'd be limited by how many memory cards I could have!
Finally, I wanted to answer the original question. As far as which SNES game I would take with me... It would definitely be Legend of Zelda: A Link to the Past. I know, one of the most used answers, but for good reason. That game doesn't get old.

I would actually stress the RPG Makers for PC, as you can find hordes of downloadable content.

Okay, I gave this some thought and there a few games I could probably think of.
Starfox 64 or the original Starfox
Maybe Final Fantasy 6 since I played through it numerous times when I was young and wouldn't actually mind another playthrough now
Castlevania:Symphony of the Night. I played the 360 version twice, recently played the PS 1 version twice(not counting my first playthrough years ago), and I actually have seriously considered buying the Saturn version, the original japanese Playstation version and the best of the whole bunch;the PSP version. So yeah, I think this game qualifies. You discover something new each time. A cool new weapon you never used, speed run tricks, 0 enemies killed challenges, using spells before you get the scrolls. The glitches in this game alone allow you to do all kinds of crazy things like sequence breaking, keeping your weapons at the start of the game, increasing your map percentage beyond the max, money making glitches, making some equipment stronger than they are suppossed to be(the walk armor+map percentage glitches)etc, etc, etc. One of the reasons I love this game is that there are so many ways to manipulate, abuse and break it. You can break so many rules and get away with so much in this game. It's one of the most "broken" games ever and yet I love it for that.
I used to love Mega Man X 4. Played it many times when it first came out. However, I played the japanese Saturn version last year and I think I finally reached a point of exhaustion with the game.
Beat'em ups and rail shooters are two genres I often myself myself playing repeatedly so any classic game from either genre could be in this post.
Still though, like I said earlier and as others have said, EVERY game gets boring eventually
