ever since I played Uncharted 1, I always felt this urge to try some. I am trying to define what I like about games developed outside of Japan.
you will also notice in my list that I don't have that many from previous generation. I only mentioned like 2 games, one which happens to be Max Payne 2. I am still a little hesitant to try Max Payne 3 because I'm not really heavy on shooters. I like guns with some other stuff going on besides shooting.

You may want to give the Mass Effect series another shot. Depending on the version you played, ME1 on 360 has interface clunkiness that was addressed somewhat in the PC version - 2 & 3 are a lot more "streamlined" however, so you might just try jumping straight to 2 as well.
The only real problem with 3 was the ending, and it was expanded/edited to be satisfactory. I mean, you can still poke holes in it, but it was definitely improved.
I'd also suggest giving Deus Ex a shot in some form - Human Revolution is good, and a prequel, so you're not really spoiling anything by playing it first.
Might try one of the 'shock games too.
Portal series if you haven't played it. Maybe the Thief series.
Alice: Madness Returns. Personally, I found the stages to drag on far too long, but it's got some good sequences nonetheless.
Might reconsider Fallout3 or New Vegas. I don't tend to stick with Elder Scrolls games either, but those I enjoyed despite them being very similar.
If you don't like the way characters look, you can mod the ever-living crap out of the PC versions.
You might want to try the Fable games. Their main flaw is really that they're fairly shallow, but still, fun enough. Kingdoms of Amalur if you like that style as well.

I agree, Bully is amazing. I haven't played it in awhile, though. I got as far as the bike race against the greasers and haven't been able to beat them yet. I really really really hate racing missions in games like that. I couldn't get anywhere in Ultimate Spider-Man because the first frickin mission in the game is a race and I could never beat it. I don't think i am going too far back to play some games. I guess the reason why I suddenly became interested is mainly because I like what they are doing this generation. I was definitely not a big fan of how they looked like in the past because they simply didn't look "appealing" to me. Let's take Hitman for example, while the "idea" of playing as an assassin is great, i simply didn't feel the urge to do so at that time. I probably didn't like the bold headed character, but it was mainly because the overall "art direction" of the game didn't strike to me as "realistic." The new Hitman Absolution on the other hand takes advantage of today's tech and makes it somewhat more appealing than it was before. IMO, Developers of outside of Japan simply had a different way of approaching game design in the past. Today, we are seeing more games like Uncharted that seem to break that tradition of how games were designed in the past. well, they had to.

sigh...it definitely looks cool, but I'm afraid I will pass. I don't play a lot of FPV type games. While you do have options on how to play it, much like Deus Ex, a common way to play Dishonored is more as a stealth game.
First-person view is fairly common for games outside Japan though. If your aversion to it is based on motion sickness or general "feel" being off, it might be something you can alleviate. Maybe not as much on consoles, but on PC most first person games have ways to adjust the field of view, which is usually the culprit. Even fans of FPS and the like will find some games barely playable if the FoV is too narrow.

How about Ico or Shadow of the Colossus? Those are third person view games similar to Castlevania LOS that you liked and very similar to Enslaved (kind of)
