I don't know about that, something as simple as a developer from the era confirming it in an interview or something would be enough for me. I wouldn't really be surprised if it were true, (I seem to recall reading that Crash Bandicoot was designed to not use the color red very much because of crappy tvs) but I don't know, I kinda imagine that a lot of artists from the era would rather you see their work clearly. Maybe, but Star Fox is a bit of an edge case I think. What it was doing in general was pretty new. Also, crappy video quality might smooth over dithering for stuff like this, but it also smooths over any attempts at using dithering for fine detail or texturing.I think composite looks smoother here.

So maybe when ninjainspandex said "a lot of old games", he was overestimating the quantity, but it's at least true for some games. I'll try to dig up some more later, although this has been hashed out many times. Overall? It's clearly RGB first, then s-video, then composite, then RF.

Looks like he used a capture card, which might explain things. Yes you are correct on overall i prefer s-video over composite on my systems, infact apolloboy is modding my megadrive for s-vid. I was just stating that games weren't always designed with rgb or s-video in mind. My advice is get a crt with s-vid at least, also as for rgb unless you have a professional grade crt like a sony pvm you will be hard pressed to notice a big difference between s-vid and scart. On an hdtv is a different story.
