Yep, I am using Extra Virgin Olive Oil. I dont typically use olive oil other than EVOO.

It is probably the temp then. CRANK IT UP TO 500!

Sometimes, but rarely with beef chili unless I need a counter balance to something like coffee grounds. However I do make a chili that contains a bit of molasses that starts off sweet and ends with a bit of a burn. It's like a mango-habenero experience when you use molasses in chili.

Oh, nice. I used some recently to make a pot of chili, but it ended up being too much sweetness. But I was trying out buffalo meat too at the time.

Buffalo does well in chili when mixed with Rattlesnake or Shark

The problem is trying to find those. I'll have to special order rattlesnake, though I may be able to get shark at the Super H Mart. I consider myself lucky in that I can find buffalo meat at the nearest Kroger's.

Super H or Buford Hwy Farmers Market would carry Shark no doubt. BHFM use to carry Rattlesnake, but I always got it through a contact I had in the meat industry. She retired a couple years ago though.

Exactly. But I will keep you posted on the Super H Mart. After all, I'll need to go back once I finish off my bucket of kimchi.
