Sometimes, but rarely with beef chili unless I need a counter balance to something like coffee grounds. However I do make a chili that contains a bit of molasses that starts off sweet and ends with a bit of a burn. Oh, nice. I used some recently to make a pot of chili, but it ended up being too much sweetness. But I was trying out buffalo meat too at the time.

Buffalo does well in chili when mixed with Rattlesnake or Shark

Super H or Buford Hwy Farmers Market would carry Shark no doubt. BHFM use to carry Rattlesnake, but I always got it through a contact I had in the meat industry.
