PlayStation, Game.com, Microsoft Windows, Nintendo 64, Dreamcast, GameCube, PlayStation Network
Each version has there own perks and exclusive features.

PS1 being the original.
The Dual Shock Re-release obviously added the Dual Analog sticks and Extreme Battle Mode.
PC I am sure its the same as the Dual Analog edition but its in higher resolution.
N64 has no load times, it is quiet an impressive port.

I have not played the DC or GC version. But I have herd that the GameCube version is better. I avoid the Game.com version like the plaque. I would say my favorite version of the game that I played is the Dual Shock PS1 version.

All i can say about the game.com version is STAY AWAY from it.

I didn't play the gamecube or the dreamcast version but for the rest:

PS1 DualShock you can play with the thumbsticks and also adds a new game mode the Extreme battle.
PC i didn't see much of a difference from the dualshock (maybe better graphics) it can be a bit hard to play it on newer PC's.
The N64 has new alternatives costumes,no loading screens, a item randomizer and a blood color selection, but some of the FMVs are pixelated.
The PSN is basically the same as the dualshock but you can play it on your psp or ps3.

I would say that the Dreamcast RE2 is the definitive version (and it's my favorite). It contains all of the content from the PS1 Dual Shock version, but the biggest difference is in the presentation. Higher resolution assets were used for the textures and backgrounds giving it a sharper, cleaner look. Yes, even over the Gamecube version. The cutscene video is probably the best out of any version as well. Load times are pretty brisk.

If you have a choice get the DC version over any of the others.

Thanks for everyone who replied,

I decided to continue playing the game on N64 , because when I saw it on youtube I just could NOT believe this was N64 graphics , it looked almost the same graphics I was playing on my Gamecube version! Plus the no loading times is extreme plus since RE is all about running from door to door (I hope there is no long door animations)

I want to play my Dreamcast as I am seeing less and less reason to do so, the library is limited since a lot of the games have been ported already, I turned on RE 3 just to see how it looks and I am sorry to say the graphics look very sloppy/blurry . I hope its something you get over because when I launched RE2 GC i was upset by it but after sometimes it felt all right. I am using composite on an HDTV.

I would play it on VGA but no VGA input in my HDTV and the VGA adaptor seems too expensive for slightly better picture.

Graphics wise or overall?
I just started it to check it out , I got the option for like 6 costumes but they do not look like 6 costumes, more like 6 different characters. For the girl

Just overall RE3 is a sloppy port on the Dreamcast while RE2 was a complete overhaul.

What everyone else said. I love RE2, and it's also my favorite.

Just as a random thought, does anyone else reach the police station and think, as one of their first thoughts, "Man, is this place is brightly-lit!"? It makes sense that it would be in comparison to the setting of RE1, of course, but it always surprises me, and sometimes makes the interiors of RE2 a bit less creepy. Until windows/walls/one-way mirrors start breaking.

The gamecube version is a straight port of the PS1 version, just like the N64 version is. I don't know why the graphics are blowing you away, unless you're talking about the N64 cart still keeping those FMVs. The N64 version is impressive, no doubt, but it's not like they did something flabbergastingly improbable on the hardware.

I will not lie , it must be the best graphics I have seen on an N64 . What other title on N64 would u say has superior graphics to the RE2 ?
