I haven't played the NES ultima's either, but I can't imagine they're that great. For instance:

The NES port is quite different in almost all respects. The graphics are more anime-like; party characters have portraits of their own depending on the class, for example. The music is completely different, and some of the game mechanics are different. For example, the party members are shown following the lead of the first character in the party. The game also uses menu system. Apart of moon phases, there is no status display on map view, only pop-ups when they're needed.
Of course, the PC ports are inferior to the Apple versions too, but they're still decent. Dosbox is dead easy to use, and available on any platform. Plus, Ultima really needs a keyboard.

There is a good port of Pool of Radiance available for the Nes. If you are a fan of Ad&d it´s definetly worth checking out.

Sweet Home, Destiny of a Emperor 2, Faxanadu, Chronicle of the Radia War, and Willow are some of my lesser known favorites.

I was a friend of mine's house last night and he one of the Ultima NES games. Maybe I should borrow it from him and let you guys know what it's like.

I liked Faxanadu.
