WWF Attitude for PS1 had all kinds of replay value depending upon which wrestler you used.
If you beat the game with a create-a-character wrestler, you'll unlock new stats to build a super-strong character.
If you beat the game as Al Snow (a notoriously bad wrestler) you can replay the game as Head (Al Snow's imaginary friend) Who is the strongest wrestler in the whole darn game.

Star Ocean: The Last Hope has something along these lines as well: most of the strongest and best recipes can only be crafted when starting the game again on a higher difficulty. I'm pretty sure your characters don't retain their levels and original items, but the items you need to craft the best ones do become available in a new game. New dungeons are also unlocked.
