The 3G model just screams "Waste of money".

Yup, as big of a proponent of the Vita that I am, I see zero benefit to a 3G model.

I bought 3G for the 8g memory, free game and free month of 3G service.

Then I found out I wouldn't get the "free" stuff unless I paid for a month... so now I feel like I was screwed over.

That is correct, you can browse the store. There's also the ability to update leaderboards and such while on 3g.

One thing I've felt with this generation of consoles is that not being online when I play retro stuff feels "lonely" in a sense. It probably sounds silly, but I like just hopping on and seeing what my friends are doing before I jump into a game or just knowing that my friends can see what I'm playing. The 3g Vita duplicates that experience while I'm out and about. To me, that has value.

Is it just me, or is about 70% of Uncharted Golden Abyss spent manuvering Drake across some kind of ledge? I swear, it's all I have been doing so far!

I was under the impression that was what the majority of the series was about.

That decreases as the game goes, but yeah - that's a bigger "feature" in this one than it was in the last two console titles iirc.
