That's something that 3D Castlevania games have not done yet.
Halfheartedly agree, but I also lean towards the thought that the designers tried to overachieve on LOS (and that possibly a few great 3D CV games exist). For me it has a lot to do with he flow of the game, as its simply inconsistent.

For some reason, I can't stop playing it though.
Yeah, I had some complaints and issues with the game myself and yet kept playing til the end. I guess they did something right.

Given that I play Beatmania IIDX, I don't think I'm running out of challenge soon. Really, it's probably the hardest game ever made and I'm not exaggerating.

General_Norris! You're back! Well, I suppose you didn't exactly leave...

You can re-play that level and get to the bonus round. You can also save if you get the gem for the level.

It's more of an inconvenience than difficult. I had a few occasions when I just didn't play the game because I wasn't sure if I would be able to save the game before having to stop.

Mind, nothing quite prepares you for DKC 2, where it gets difficult quite sharply and continues that way, with the odd break so you can tuck your eyeballs back into your skull after reeving them out in frustration, all the while crazily mumbling to oneself "brilliant game, it's a brilliant game". DKCR on the Wii also perfects this balance of addictive, playful masochism.
I just played through DKC, getting 90% completion. I am about halfway through DKC2 and I find the game to be much easier than the first. In particular, finding the bonus areas is no where near the challenge as in the first game. I have been able to 100% a level the first time through in every instance except two, where I missed the DK coin. I think the combination of more obvious hiding places and Cranky Kong's hints make it easier.

There was one level that drove me crazy. I don't recall the title, but its the one where the water is rising and you have to climb the ship quickly, otherwise a tiny fish eats you.

Seriously? It's the first time I've seen someone say they found the original harder than the immediate sequel. The only bit of the original I found harder than DKC 2, was the battle with K.Rool, where you've to do the whole battle in one go, whereas in DKC 2, you get a break after every third hit in order to break the barrel for Diddy/Dixie.

On the other hand despite being my favorite, Sonic CD probably has one of the easiest final boss fight, ever. Dang is it pathetic.
Agreed but I think Castlevania 2: Simon's Quest may wear the crown to easiest final boss fight w/ Dracula or even the Grim Reaper even though it's not the "final" boss it's sad how you can just walk by him!

There are so many hard games out there I don't know if I can list them all but a few that stand out for me:

Battletoads
Ninja Gaiden series
Zelda II
I am addicted to video games, especially retro gaming from my era. I have: NES, SNES, Nintendo 64, Gamecube, Gameboy, GBA, Wii, Sega Genesis, Sega CD, Dreamcast, PS1, PS2, Xbox, and Xbox 360. I have probably over 1,000 games in total for all these systems combined. Yes, I need help and I wouldn't have it any other way! This is my passion and hey my wife still loves me!!
