I got a couple of cheese slicers that work perfectly for potatoes. I can slice perfectly thin slices of potatoes with it. The problem is that I need like $10 worth of oil to put in the deep fryer. I guess I can fry them in a pan with less oil, but it just isn't the same.

Most fast food places, McDonalds in particular, fried in lard until the late 80s. Most of taste is carried in fat, which is why things taste better with butter and why so many meats "taste like chicken." Lard is fat, so cooking in it adds a different level of taste to the food.
