I think it could have easily handled it. The 3D effects in SotN were extremely limited. 32X has done more difficult 3D than that. The 2D parts of the game would be no challenge at all. The only places for concern would be the high quality prerecorded music and the sheer size of the game--both easily solved by making it a CD32X game.
All of that is moot though, since the plans for the game were evidently quite different while it was on 32X. Supposedly, it would have been more like Rondo of Blood on the PC Engine Super CD-ROM2, with a story involving rival vampire hunters. Only some sprites survived from this could-have-been game, and that's all SotN seems to have in common with it. The ideas to make Alucard the main character and to make the game play more like Metroid or an ARPG appear to have come along later.
