Star Craft Ghost - I have heard bad things from those who played demos at expos, but it has always been an interesting "what if?".
Original Resident Evil 2 - This one is well documented and needs no introduction.
Garou: Mark of the Wolves 2 - Screenshots exist and it was rumored to be pretty far along.
Layer Section 2/Galactic Attack 2/Gunloc 2 - Video of this one exists and it looks to have been very similar to the original. At some point Taito scrapped the game all together in favor of the polygonal Ray Force.

Back when I was still getting Nintendo Power I seem to recall that Final Fantasy VI was going to get a 3D DS remake like FF IV. Does anyone else remember this? Or am I thinking of something else?

The first two no longer exist in any playable form to my knowledge, I know that much of the design team for Resurrection went on to build SotN, but I would have liked to have seen the DC with its own Belmont saga.
I nearly lost it when I found out that FE 3 had been officially axed. This was one of the few "big deal" titles for me on the PlayStation 2 back when I was growing up. Oh, what might have been...
And while I know Propeller Arena was eventually leaked online and playable, I still think it would have been nice to have a true retail copy sitting in my collection.
