Motorstorm is a fun offroad racing game, although you should pick up the sequels. Another game to get is BlazBlue: Continuum Shift, a fun fighting game made by the guys who made Guilty Gear. Also, I have to say that I didn't like or care for Littlebigplanet, Modnation Racers, or 3d dot heroes.

Also relevant would be if you already have a 360 or gaming PC or if this is your first foray into HD gaming, since there are plenty of cross-platform titles.
Though you said Demon's Souls looked fun so I'll also recommend Valkyria Chronicles and the Fallout games.
I've been a PC gamer ever since the release of Counter Strike Source and I used to have a 360 but sold it because I didn't like it.

And no i'm not looking for a shooter game considering I can find a good one anywhere and its not worth going to the internet.

A lot of the hardcore Guilty Gear fans consider Blazblue to be easy mode GG...but IMO, if you liked Guilty Gear, you really shouldn't miss it. The only thing that's pissed me off with it is that Continuum Shift (the more recent one) has DLC characters, and they're not cheap ($7.99 a pop, and there are three).
Continuum Shift 2 recently came out for handhelds, but the home console versions got a patch to update 'em to that.

Personally, I enjoyed the Uncharted games - I'd say give 'em a shot if you can borrow them or something (they're also pretty cheap at this point). The ESA bundle, if you can find it for MSRP of $29.99, includes the first one plus Tomb Raider Underworld and Mercenaries 2. I've seen it locally at Best Buy still, but the price on Amazon is $39.99 now.

Arkham Asylum if you haven't played it on PC. Demon's Souls as others have mentioned.
Heavy Rain is a maybe - it's more of a modern FMV/Laserdisc game, but still interesting.
Red Dead Redemption if you like the GTA sandbox style games. Assassin's Creed 2 (more perhaps). For the current price, you might want to give Enslaved a shot. If you like God of War/DMC style games, then Castlevania Lords of Shadow, Bayonetta, and Dante's Inferno may be good buys if you see them cheap. MGS4 if you played/liked the previous games in the series.

Personally I wouldn't bother with Bethesda or Bioware RPGs on the system if you still game on the PC. Some of the exclusive FPS are supposed to be good, but I wouldn't know as I avoid the genre on consoles.

- Yakuza 3
- Yakuza 4
- MGS 4
- MGS Peace Walker

Dirt 1/2/3, GOW 3, Red Dead Redemption, Assassin's Creed 1/2/BH, Uncharted 2, GT5

Less Popular but I personally enjoyed them:

Aquanaut's Holiday - Pretty hard to find the english version

If you want to play something that you wouldn't be able to play with a keyboard and mouse as funly, I would recommend free running games as Mirrors Edge or any of the Assassins Creeds games. These play way better on a pad.
Also both the Uncharted games are awesome, Black Ops I agree with though.

i second Uncharted 1/2, both are a must play through for any current gen gamer (plus lots of eye candy), MGS 4 if you've been following the Metal Gear series, 3D Dot Game Heroes as was already mentioned, and can't go wrong with Batman AA.
