That's a big thing too. If you're totally new to the game playing against someone that's very good with their character, you pretty much have no chance at all and will feel totally helpless as you watch your character get combo'd into oblivion and can't seem to do anything to stop it. The game is VERY combo based, unlike (most) Capcom fighters (obviously not counting the vs games) and 3D fighters. It's more or less all about combos.

I know combos can play a big role in Capcom fighters, but here it's pretty much required for competitive play. Do the challenge mode for the character you like. Once you can do like 50% of the challenges try doing them against other players or the CPU.

THIS might be where I start to run into problems though. Considering I'm just starting to get okay at SF4 and just starting to seriously get into MVC3 (both of which I love), I'm not sure how much time I want to spend learning a new fighter y'know? I guess I was thinking this was going to be a bit more pick-up-and-play. Maybe that's the real disappointment for me.

When I picked up CT to play it I 1cc'ed it on my first go. I don't consider myself very good at fighters (those of you who have played me online can vouch for that) and while I found it to be fun, it seemed like most characters had one or two moves that were every easy to spam and win with. I am sure it is different if you go online and play, but I tend to measure a fighter by its AI since I don't play a lot against others. It is a fun game to throw on and play through on occasion, but it didn't strike me as balanced enough to play it online regularly. Perhaps CS fixed these issues?

Depends on what you mean. There are loads of spammable moves, but any decent player will be able to counter them without much of a problem (same goes for any fighter though I guess).

I don't think a fighter should be measured by it's AI though, since the point of a fighting game is to play against a human opponent. If you want to see the AI wreak havoc, put it on hell mode. If you want to see the AI play intelligently and use the characters similar to how another player would, play Score Attack mode. Arcade Mode on normal is almost meant to be cleared in one go for like any fighter.

As for the balance issues, yeah, CT is very unbalanced. v-13, Rachel, and Arakune are miles beyond the rest of the cast. In the right hands, v-13 is nearly unbeatable in CT. It's a brokenly uphill battle for any character. CS fixes the balance issues big time, but that's not to say it's the most balanced fighter you'll play. To the game's credit though, CT was a fresh IP built from the ground up with new characters.

Calamity Trigger for PSP is pretty much a straight up port of the PS3 game with some new features. It's a very good port and plays well, but some people have complaints with how the sprites were handled. I think they look fine though. It has some new features though, most notable the appearance of the unlimited characters (they're in CS and available as DLC for CT) and Legion Mode (also in CS).

Continuum Shift II for PSP is a port of CS that includes the new balance patch (which alters the game somewhat drastically) and all the DLC characters, as well as a new Abyss Mode and some new story chapters.
