Lunar on PSP should be easy to follow, and the storyline is quite good.
For SRPG, FF Tactics can be a tall order, I would suggest start with Jeanne D'Arc, as it is much simpler, but no less satisfying - one of the under-appreciated titles for PSP.
The GBA and DS has plenty of RPG's to choose from.

I don't think its necessarily the difficulty that determains a beginner rpg. I would not reccommend Star Ocean to a beginner, even though there are not a lot of tough fights until late game. Its just a large game that is easy to get lost in.
Same with Chrono Cross. I never died in that game (granted, you can run away from every single fight), but I think its style would push away a gamer that isn't used to rpgs yet.

I am not really too informed on the dragon quest games, but I really enjoyed 3. I have heard 7 is great, but I could not get into it. It starts out really really slow.
I don't have a DS, but there are great options there that I have never played. I know that Level 5 (who made DQ8) also made DQ9, so it will probably be in a similar ballpark. Just a guess though, as I have never played 9.

For the DS, I'd start with DQ IV or V. Both are fantastic and take different approaches to their storytelling. Branching out, VIII gives the standard huge DQ world at a PS2 scale. You can also snag DQ III for the GBC, which streamlines some of the NES elements of the original. There's also DQ I&II on GBC, which I'd recommend over the NES originals because of how grindy the originals are.

IMHO the Pokemon series hasn't changed TOO much from the earlier games to the later ones. I think you should be fine with any version you can get your hands on. I ended up getting Pokemon SoulSilver last night. So far I'm enjoying it. I have to admit, I used to think it was just for kids, but after reading a few threads on here, and doing some research here and there, it really is a pretty deep series. I think my next purchase will be one of the Dragon Warrior/Quest games, but it will probably be a while before I need to worry about another game.
