Some other sticks do it too. My Hori Fighting Stick 2 does and I swear I've seen it on another one as well.

I'm interested to find a good stick that I could use for both my PS2 and PS3...

Didn't realise you bought a PS3 already, noise!

Anyways, I bit the bullet and bought the Mayflash Fighting Stick. Guess what? It has a PS2 controller port AND it works perfectly with the PS1.

I also have a Mayflash PS1/2 to Gamecube converter and the stick works well on the Gamecube. I don't have any shmups, beat em ups or fighters on GC so I tested it with Genesis Plus GX. (Maybe it's time for me to get Radirgy Generic?)

I also happen to have a no name USB PS2-PS3 controller converter which I use occasionally for my PS3 and PC and, yes, the stick works on PS3 and PC as well. (It didn't work with Scott Pilgrim though... I think the game only detects PS3 controllers)

Here are my impressions of the stick:

This is the first arcade stick I've bought but I find it to be a solid, well-built and sturdy. The chassis is strong and heavy, and it didn't move around on my desk during some heavy shmup action. It's also a little bigger than I expected, and comparing photos of this version of Mayflash's stick and the previous USB universal model, it does look like it's bigger than the latter.

The buttons are a little soft for my taste and there's no discernible or satisfying click when you press down on them but I've found that it doesn't matter when you're in the heat of a game anyway. The stick itself does click when you pull it to each of the cardinal directions, which I think is a good thing?

Overall, I'm happy with my purchase. It's not a Hori, but it's cheaper and looks like it should be good enough for my needs, which is shmup and beat em ups. I don't play fighters.
