Probably because the LEDs are in the wrong place. To determine distance from screen requires 2 LEDS, so that the tracking sensor can determine how far apart they appear to determine your relative distance in relation to the screen. The best way to make this work would be to have some sort of glasses with an LED on both sides, so that it actually monitors the position of your head. For the wii, these LEDs are in the 'sensor' bar (stupid name really). To track those LEDs would require a sensor, which for the wii is in the wii remote itself. If you watch the video, you'll see he uses a mount for the wii remote and moves the sensor bar about - how would that work for a game? Technically it COULD be possible to just do it in reverse, but it would be quite inaccurate because A) When you angle the wii remote even slightly incorrectly, it'd lose the signal and stop working and B) because the wii remote is in your hand, it'd be difficult to determine where your head is to angle the in game camera appropriately.
If you were to use one wii remote for tracking and one for playing like he does in the video, you need two wii remotes. Whilst there are plenty fo wii owners who would have two, I doubt many developers would be willing to make a game which outright requires two, aswell as including the glasses and the stand for one of the wii remotes. Being limited to one player may be a concern too.
