Custard has cool properties - like silly putty, it can react as "bounce" or "pliable" depending on the type of contact it is subjected to. So if you quickly "poke" a bunch of custard that is at the right concentration, the spoon will tend to bounce back, whereas if you slowly insert the spoon or leave it there, it will sink.

I would totally like to run on one myself.
