Man, the rest of us are going to have to make our own team to counter the Double Dragon 3. 
If you have a GameCube, you have access to every Resident Evil game except for RE5, which I haven't heard great things about anyway. So something to think about if you haven't got a Cube yet.

Code Veronica is one of my favorite RE titles. I'd probably start with RE on Gamecube or 2 on N64 though and if you enjoy either title then grab Code Veronica next.
Zero is ok, but not quite as interesting as the rest. I liked it, but would only recommend it to people that already enjoy the series.

As for Resident Evil games, I think you should start with RE5. Maybe it wouldn't be so disappointing if you weren't familiar with the series.

I don't see why there's any reason not to play the original first (the Director's Cut anyway), it's legendary. Then move on to 2 and 3 if you dig it at all. Then Code Veronica (which some hate, I haven't finished it but think it's amazing). Then after all that, move on to the remake on Gamecube (if you play this first you might ruin your palette and never get to enjoy the originals at all, which as i may have said, are legendary imho). THEEEEnNN, 4 on the Wii cuz i'm told the pointer controls just make sense for it. I've been a fan of the series since the release of Directors Cut and find that the optimal experiences for each installment are as follows (I could be wrong on a few):
Resident Evil: Director's Cut on Playstation (the Saturn version seems to have some perks, anyone vouch for that version over the PS? edit: i dunno, i just watched some footage of the saturn, then the ps and the saturn version seems to have less polygons, anyone else notice that ever?) (alternatively: the pc version might be the primo one to play)
Resident Evil 2 on N64 w/ the Expansion Pack and S-Video (right?) or on Dreamcast(?)
Resident Evil 3 on Dreamcast (you can pick from 9 or so costumes right off the bat)
Code Veronica on the Dreamcast for VGA or PS2 for more cut scenes (edit: apparently code veronica x on the dreamcast is the same as the PS2 version, plus vga)
Resident Evil 4 on the Wii for the pointer controls
