all of the Mario RPGs are easy, but a blast. Same with Pokemon. Live A Live is easy up to the final boss, but is also very fun. Earthbound is the easiest of the Mother games, only requiring three points where you need to grind (Right after getting Paula, the damn mall of doom, and Stonehenge Base).

PoPoLoCrois is a breeze yet it's one of my favourite RPGs. A few boss fights did give me a bit of trouble, to be honest.

The Grandia games. Love them, but they're easy. I think that's only because the combat system is so well designed though. If you know what you're doing and paying attention, you can easily put the breaks on whatever your enemies are trying to do. In a way, it's sort of like the combat in Final Fantasy X 2 and FF 13. I love being able to interrupt enemy attacks

Shenmue 1 and 2 Dreamcast - more like action adventure rpg
Its easy and still amazing to this day, i can go back to town any time and just waste hours roaming around and doing random such as, visiting shops, hitting the arcade, talking to strangers, going through my house, buying all the collectible toys, etc...

I think what separates most (not all) rpgs from being hard or easy is the amount of grinding that is required.
Right now I am playing Final Fantasy I on NES, and that is pretty hard. Its not very forgiving.

Okage, Jade Cocoon 2 and Magic Pengel for PS2 were all great games and pretty easy as well. Has anyone played Opoona for the Wii before? It looks like it would be a great game for the entry level RPG player like my 7 year old daughter.

Resonance's difficulty is weird. It starts off easy, then gets harder (really hard if you don't realize how to exploit the combat system), then you figure out how to make an uber gun and it gets easy again and pretty much stays that way until the bonus end-game dungeon.
