The difference between a mouse and a wiimote is that i can quickly flick the mouse and be oriented to hit the target WAY before the wiimote gets around to it.
The only game i've seen get this right is the quake fanmade port for homebrew.
I haven't played the Quake port, but that demonstrates what I'd already assumed--that the "quick turn" issue is something that can be worked around in software and not a flaw of the remote itself. I don't think many developers put enough work into refining their FPS controls on the Wii. Maybe they don't think serious gamers are going to be buying them anyway? Or maybe they're just too busy trying to shovel software out the door.
Regardless, if a mouse isn't an option, I do much better with the remote than with a stick. I might be able to turn faster with a stick than with a remote, but still not as fast as with a mouse. Also, on a stick, I find it harder and slower to aim accurately at things that are
in front of me. I'm not even going to worry about how well I can turn around to face what's behind me if I still can't hit it once I'm facing it. Some people have an knack for aiming with a stick, I know, but I find it much too fiddly to deal with.
