I am a left handed drummer who started righty, as soon as my teaher realizsed i was a lefty and switched and played much, much better. The same thing, i would imagine, goes for guitar. If you are left hand dominent, you are going to want to pick with your left hand naturally. Sure you COULD learn it the other way, but from my own experience from playing righty drums at the beginning and switching (after playing marching snare for a few years right handed, and kit for about 8 weeks) the difference for me was big time. I was playing a lot better, staying in time better, more accurate hits, etc. I think it really depends on the person too.
And surprizingly enough, i play guitar right handed, heh.
