Right, i've figured it out.
Press cmd+, or go to Yabause -> Preferences
BIOS: choose your BIOS, it must be in .BIN format.
CDROM: choose Dummy CD
Region Auto-detect
Change to the Video/Sound tab
Video Core: OpenGL
Enable Auto Frameskip: Leave unchecked, unless you have performance issues in game.
Sound Core: SDL Sound Interface
Don't change anything in memory tab
You can assign your buttons in the Input tab.
Go to Emulation -> Run
You should see the Saturn bios run, and plonk you into the CD player interface. If you get this far, everything is set up correctly and you're ready to start playing games. If not, go back you missed something, if you're still adamant it's not working, reinstall the emulator from the DMG again, when prompted to overwrite, select yes.
For playing images (I don't have any of my saturn games to hand), go to preferences (CMD+,), then under CDRom choose ISO or CUE file. Then browse your image, it MUST be in ISO format, otherwise the emulator will crash every single time.
