Kenshin is much better enjoyed in Manga form due to the endless filler episodes plaguing it. In fact, it was cancelled before the final manga arc was animated due to just how bad the filler was.
I feel compelled to warn against watching Kenshin unless you plan on skipping ALL the filler and losing the whole story.

for the most part i hate dubs. i can stand some official dubs (like cowboy bebops dub) but i can't stand fan dubs, worst things in the world. i would much rather hear it in the original language they way it was meant to be. reading subs isn't as bad as the complainers make it sound like. you should really go for subs anyways. more and more online that's what your seeing. slowly it's going to be hard to find anime you really want to watch without it being a sub.

Fan dubs and official dubs are very different things. For whatever reason, I don't ever feel as drawn in when I watch shows subbed. I can't really even explain it, it's just the way I prefer things. And yes, I'm one of those people that complain about reading the subs. What's interesting though is that while I do watch a fair amount of anime, I don't read any manga whatsoever. I guess I just don't like reading in the medium.

All I watched was the Kyoto Arc, starting with Kenshin's fight against Saitou and ending with the final battle against Shishio.
I'd recommend everyone else do the same. The episodes before were too episodic, and the episodes after were filler. The Kyoto Arc is right up there with Yu Yu Hakusho.
I highly recommend both, but Soul Eater will last longer. I'm only on episode 10 for Soul Eater, but it's quickly going up there with my favorite animes.
OEDO and Midnight Eye are both awesome, but Goku Midnight Eye has a naked redhead mouthlaser motorcycle chick! I like how the dubs manage to fit swears into every possible point in the dialog.
