What happens if a game isn't compatable? Does it just not work or does it look funny? I'm curious...

The Dreamcast games that do not support VGA will stop loading and display a text message on screen stating display device not supported.

Say I'm running this on an HDTV. Would the incompatible games still look alright through the regular RCA jacks? I just know that some one the older systems look bad on HDTV and NES is even close to unplayable.

All the games would look fine especially if your HD is a CRT.

Best solution is get a VGA box that has both VGA and S-Video/Composite out. The box has a switch to choose which cable out. For games that don't support VGA simply flip switch on VGA box and video input on your TV remote. If your TV supports it choose S-Video over Composite and VGA.

When you place the VGA box in VGA mode all it does is ground out a couple pin internally telling Dreamcast to go to 640x480 mode. Games that support VGA are kicked up to this higher resolution and definitely look better.
