One of the only game I can really think of is Circus Maximus on the Xbox. It got terrible reviews and very likely deserved them, but it's one of the few co-op racing games out there and definitely one of if not the only chariot racing game.
I also love the Katamari games. They're pretty universally aclaimed though, so I don't think they qualify as a guilty pleasure.
