Showing my age here, but I loved Accolade's sports games for the Commodore 64: Hardball! and 4th and Inches. It's funny how when you fall in love with a game with made-up rosters and play it over and over, you really get to know those imaginary players! I strongly believe that Hank Contos should be in the Hall of Fame, even if he never existed. Had Contos had played in game that featured a season mode, he would have clocked 150 homers in 1985. As it is, he is just another forgotten sprite from the 80's. Sad.
Still, I don't mind outdated rosters. In a way, I prefer them. I can give you the biography and statistics of just about every player from RBI Baseball for the NES, but I'd probably only know a third of the players from a game produced today. Playing a game with old rosters is like a video game Field of Dreams. You are bringing them back to life!
I'll have to give the DS Tecmo Bowl another shot. I've only played it a couple times and wasn't really impressed, but the series is legendary, and Tecmo Super Bowl III for the SNES is one of my top ten games of all-time.

NBA Jam. The players were real but it wasn't an annual release. And the Bulls were amazing.

I use to enjoy Mike Piazza's Strike Zone (or something like that) for the N64. We would just play homerun derby all day long.

Baseball Stars did have a team of MLB Hall of Famers, The American Dreams had players like Babe(for Babe Ruth), Hank( for Hank Aaron, Cy(for Cy Young), etc.

Semi-on topic was Deion Sander's Primetime Football for Genesis. It had a complete roster of all the teams at that time (around '95) and was pretty fun. A backfield of Natrone Means and Barry Sanders was good for about 300 yards....per game
