The best Saturn IMO is "CROWS". It is based on a manga about Japanese street gangs in high schools.

And a lot of people will say Guardian Heroes although i think this is a very slow and bloated game for me to play and enjoy.

I haven't played it, but I heard the game Pu.Li.Ru.La Arcade Gears was a really unique game. Okay, by unique, I mean totally weird. It's the weirdest beat-em-up I've ever seen, and I just thought I should add it to the list.
