To make chicken batter extra crispy relies on the amount of air that has been put into it. Putting beer (something really fizzy like belgian bier, if you're feeling flush use some Chimay, if you're feeling cheap use an imitation like Kronenberg 1664.) into your batter, then whisking it hard and putting it in the fridge will make the air bubbles rise to the top. If you want it extra crispy you should put it into a soda fountain and use a couple of charges to make it extra frothy. It will come out and look like a tight head on a nice beer. That makes it ultra crispy, far crispier than the likes of KFC, it will taste much much better too, especially if you spice it properly.
Oh yeah, don't forget to flour your chicken well and just drizzle any spare batter onto the chicken while it's frying.

I can't even imagine using Chimay for anything but drinking, mainly because of the price. Maybe it cost more here.

It's about £1.40 a bottle over here in supermarkets. It's not terribly expensive but worth it, the standard white label Chimay will do. I prefer Chimay Blue to drink though it's not too bad at about £1.70 a bottle.
I don't see how using something like Chimay is any different than using first pressing olive oil in cooking. The better quality definitely shows. It just depends how much you enjoy cooking with good ingredients and making really nice food. I love cooking so it's a no brainer for me.

I wasn't saying you were nuts or anything, just that I can't imagine it. I enjoy quality as well, just have to be thrifty about it, which is hard enough to do.
edit - actually I think the store I used to work sold it for U$14 a bottle - 750ml of course.

Ah, the magnums are a bit more expensive (obviously), I was just talking about the little 33cl bottles. That's all you will need in batter.
The added air just makes the batter cook faster in the oil, and therefore increases the crispiness. I'm not 100% sure what they put in KFC chicken, all I know is that when people have had mine they prefer it.

Deep Fryer. Seriously if you are trying to duplicate restaurant style crispy breading in a frying pan it will not work no matter what you do. Pick up a cheap fryer. Get it fully heated, around 375 or so. Shake the chicken in flour (and whatever spices you want) then dip it in egg/milk and put it in the flour mixture again. You can repeat this again if you want to try and get it even crispier. Toss it straight into the fryer basket and cook til it's done. That's really all it takes. Getting it to taste like kfc is the hard part. . .

Maybe just stop eating fried chicken? Your body and girlfriend and or wife will thank you. Grilled chicken tastes much better anyways.
