Apparently, the Gamecube version is not nearly as bad bug-wise as the Nintendo DS version, though I've never played it.
I haven't played the gamecube version in about a year, so my memory is fuzzy. As I am sure you recall, the format of the game is generally run around and either kill all of the baddies or flip switches to trigger events that allow you to move further in the level. Unfortunately, sometimes in the gamecube version, killing all of the baddies did not always trigger the events it was supposed to. This happened to me occasionally.
Also, in the "Escape from Cloud City" level (I don't remember it's exact title, but you go through cloud city before finally escaping in the Millennium Falcon), there was a very annoying bug at the very end that I encountered more than once. At some point, if you were controlling R2, you could fly over to the platform where the Falcon waited early. But, you then still had to fly back so that you could go flip all of the switches to extend the walkway to that platform. I don't remember what I did, but I did it more than once and it resulted in the Millennium Falcon's doors not opening, so I could go through the entire level and not be able to finish.
On the other cloud city level, the one where you have to rebuild C3PO, there were problems there as well. If you stopped building while he was partially constructed, you often could not finish him. There was another problem with that room, but I don't remember what it was.
Also, on the Tattooine level where you could find a hidden carwash and put Luke's landspeeder through it, I regularly managed to encounter problems. A couple of times, I think I hit a button at the wrong time or something in that area and things got stuck. I think once I ended up with a player stuck in the middle of the landspeeder, unable to move.
Actually, I recall having characters get stuck in walls and stuff pretty regularly.
