I'm a huge huge fan of Taito Legends 2(and well Taito arcade games in general). I'll go ahead and point out some of the more underrated titles:
Cameltry - Essentially you have to lead a ball to a goal while rotating the play field around it. It's sort of like Super Monkey Ball in 2D and is one of the best arcade games I've ever played.
Cleopatra Fortune - Falling block puzzler where you use gems and coffins to eliminate mummies. It takes awhile to get going(as mostly you're trying to eliminate all blocks from the screen to get constant PERFECT bonuses) but it's a great title all the same.
Growl - You're Indiana Jones(okay not really) and you have to stop evil poachers by blowing them up with rockets, watching them get run over by trains, and doing a bunch of spin kicks to take them out by the hundreds. Very short and not all great but it's good dumb fun. Unfortunately both this release and even the Memories version removes the gore.
Gun Frontier - Semi-prequel to Metal Black. It's difficult to get into due to the ship's slow speed and rather methodical pacing(somebody from this game also went on to do Battle Garegga IIRC yet it hardly shows here) but it has style to burn(it's a 2D shooter that takes place in The Wild West of the Future)
Liquid Kids - Pretty swell platformer that's sort of like The New Zealand Story and Bubble Bobble in that you try to destroy many enemies at once with huge floods of water.
Raimais - This is an incredible Pacman clone(and is in fact one of the best next to Pacman CE). In the future in order to save your brother you go from stage to stage collecting dots, powerups, and avoiding/destroying enemies. Very fast, tons of stages(branching paths even), boss fights(?!), and is just flatout excellent.
Space Invaders 95 - I hate the original Space Invaders. This game however? Love it. There's a ton of variation in the enemy waves, a very neat scoring system which requires you to never miss to get the most points, and tons of very cool things.
Super Space Invaders 91 aka Majestic 12 - The US version is a bit odd here in that unlike the JP version you play every stage in order instead of choosing your next one. Regardless it's Space Invaders but with lots of changes/additions. A worthy pick though the randomness of the powerups is frustrating(doubly so when you lose the cannon powerup which is essential to scoring/survival).
The Fairyland Story - This game actually came before Bubble Bobble yet BB gets most of the credit *sigh*. Anyway you play as a little witch as she turns bad guys into delicious cakes and pushes them off ledges where they suffer a tasty death(though make sure these cakes fall on other bad guys for massive amounts of points). It's really quite good if you can get into it.
Arabian Magic - Play as your favorite character from 1,001 Arabian Nights and do what you'd Axpect arabians to do, summon genies, kill hundreds of guys with a scimitar or other weapon of choice, defeat an evil Sorceror to save the Sultan, and so on.
Darius Gaiden(though it's kind of a pain with the lousy firing rate), Elevator Action Returns, G. Darius, and Metal Black are totally worth it as well. Gekrindinian is also decent but for the most part you can ignore everything else(especially Nastar, Don Doko Don, and Raystorm). I would recommend Dungeon Magic as it's an interesting isometric brawler with dungeons, levelups, and an elfgirl whose boobs bounce with the fury when she casts a spell but the emulation in this version is very poor, resulting in so much slowdown that many areas run like you're playing a turn-based RPG.

I finally did pick it up and I am loving it. The Darius series is what had me interested, but there are sooo many titles I had never even heard of, let alone played.
Oh yeah... and Violence Fight.... muahahahahahahaha
